Carrot – Cosmic Purple – Daucus carota var. sativus
Biennial Cosmic Purple Carrots 7″ roots have a lovely, spicy-sweet flavor. This variety was developed by Dr. Philip Simon and staff at the USDA ARS in Madison, Wisconsin in 2005. This showy variety has bright purple skin that contrasts beautifully with yellow-orange flesh.

Soil and Water: Grow in light, deeply tilled soils with plenty of added organic matter. Add some sand to promote straight growth. Carrots like good drainage and a pH range of 6.0-6.6 with regular water. Keep seeds moist during germination. Apply a mulch layer once established to keep roots cool. Thin the carrots to 3″ apart.
Planting and Growing: Direct seed 2 weeks before the last frost in 3 week successions. Carrots can be grown almost all year except in climates with extreme heat or freezing temperatures. Mix the small seeds with dry coffee grounds or sand to improve seed distribution.
Harvesting and Storage: Trim off the foliage to extend storage time, but do not wash the carrots. Layer roots in a container with damp medium and store in cool, humid conditions or store carrots in the ground over winter under a layer of straw.
